What to Eat in Chengdu (2026): Local Dishes and Where to Find Them

Short answer

Chengdu cooking runs on two kinds of heat: chili, which burns, and Sichuan peppercorn, which numbs the mouth. The dishes to know are hotpot, mapo tofu, dan dan noodles, chuanchuan skewers and maocai. Snacks cost ¥10–25; hotpot runs ¥80–140 per person.

Hotpot is also the easiest meal in China to order without Chinese: the menu is a tick-box sheet you circle with a pen. Ask for a split pot, the 鸳鸯锅, and one half arrives mild.

Yulin is where locals eat. Chunxi Road and Kuanzhai Alley are central and convenient; Jinli is the photogenic one and prices accordingly. Budget ¥120–200 per person per day and set up Alipay or WeChat Pay before you fly.

What Chengdu food is

Sichuan cooking is one of China's four great cuisines, and Chengdu is its capital: a snack culture that runs all day and a restaurant scene built on neighbourhood shops. The flavour base is fermented broad-bean chili paste, black vinegar, garlic, sesame and peppercorn oil. The best dishes are not simply hot — they are hot, sour, garlicky and faintly sweet at once, and the peppercorn adds a buzzing numbness that has nothing to do with spice.

Two named places are worth a meal. Chen Mapo Tofu has served the dish for more than 150 years, with branches averaging about ¥70 per person. Xiao Tan Dou Hua is a cheap snack bar known for tofu puddings and dan dan noodles, around ¥20 per person.

Where locals actually eat

Yulin. A residential district south-west of the centre and the most reliable place to eat without a tourist markup: noodle shops, chuanchuan counters and grills for people who live there.

Jianshe Road. The late-night grill and skewer strip near Jianshe North Road station, waking up after 20:00 and running past midnight.

Chunxi Road and Taikoo Li. The commercial centre, at Chunxi Road station. Chain restaurants, English menus, air conditioning, prices to match — the right choice for a first meal after landing.

The two Chengdu traps Hotpot is priced per dish, not per person — every plate you finish goes on the bill, so the stack at the corner of the table is your total.

How to order, and control the heat

  1. Start with the split pot鸳鸯锅 (yuān yāng guō) is one pot divided in two: mild broth one side, the full chili base the other. Not a compromise — it is how families with children eat.
  2. Build a dipping bowl first香油 (sesame oil), 蒜泥 (garlic), 醋 (vinegar), coriander. Pull food from the pot into this bowl: the oil coats it and cuts the heat.
  3. Ask for mild if you mean mild微辣 (wēi là) is mildly spicy, 中辣 medium, 特辣 a mistake on a first night. Ask 不要花椒 for no peppercorn.
  4. Pay by QR at the endScan the code at the table or the till with Alipay or WeChat Pay. Cash works, card does not, and tipping is not expected.

Stalls, snack bars and small restaurants take Alipay or WeChat Pay QR codes; a foreign card works only at hotels, malls and larger restaurants. Payments of ¥200 or less carry no fee and anything above adds 3% of the full amount, so a ¥250 hotpot bill costs ¥257.50. Carry ¥100–200 in small notes as backup. Timing

Snack shops open around 07:00 and the best sell out of particular items by 09:00. Lunch crowds run 12:00 to 13:30. Hotpot peaks from 18:30 to 21:00, exactly when the queues are worst, so a 17:30 or 21:30 table skips the wait.

Summer is humid and heavy, which makes a boiling pot at a pavement table unappealing until after dark, while winter is damp and grey rather than cold. The best time to visit Chengdu covers the seasons and the holiday weeks.

Can I ask for mild hotpot in Chengdu?
