That is a genuine commuter shuttle — the two cities sit about 100–140 km apart in the Pearl River Delta and there is no flight that competes. You do not need to plan months ahead; you mostly need to know which of the two cities' four or five stations you are actually using.
Second class costs roughly ¥75 for the main Guangzhou South → Shenzhen North pairing, with other station pairs ranging from about ¥47 to ¥105. The one thing that matters: which station
Guangzhou and Shenzhen each have several railway stations and they are not interchangeable. Guangzhou's G-train hub, Guangzhou South, is well south of the old city, while Guangzhou East is downtown. In Shenzhen, Shenzhen North is the main high-speed hub but sits in Longhua, north of the centre, while Futian is underground in the CBD and Shenzhen station is downtown next to the Luohu border crossing.
Booking the wrong station can add an hour of city metro at either end — more than the train ride itself.

C trains (城际, intercity) are the downtown-to-downtown option and do not carry business class. They are a little slower because they thread through more central stations, but the fare difference is small.
How often do they run?
This is the busiest passenger rail corridor in the country and one of the busiest on earth. Published counts of daily services range from roughly 200 to over 500 trains a day in each direction depending on how the counting is done, high-speed G and C services plus slower D trains. Trains start around 06:00 and run past 23:00, with a handful of departures after midnight.
In practice that means you can turn up and take the next one outside holiday peaks. You do not need to build your day around a specific departure.

At the station

- Metro connections. Guangzhou South is on metro lines 2, 7 and 22. Shenzhen North is on lines 4, 5 and 6, with Line 4 running direct to the Futian CBD. Futian station is on lines 1, 2, 3, 4 and 11.
Continuing to Hong Kong
Shenzhen's Futian station is the cross-border station, and trains run from there to Hong Kong West Kowloon in about 14–29 minutes. You can also ride straight through from Guangzhou South to West Kowloon without changing trains.
The important structural point: at West Kowloon, Hong Kong and mainland immigration are both handled inside the same building under the "co-location" arrangement. Travelling from the mainland into Hong Kong, you board normally at your mainland station, and you clear mainland exit and then Hong Kong entry on arrival at West Kowloon. You need a passport that is eligible for Hong Kong entry, most nationalities get visa-free access for 14 to 90 days depending on nationality, and you should check your own country's arrangement rather than assuming.
